Who ever said no good story started with, “so I was eating this salad…”? This seasonal salad is anything but boring. Spice up your traditional Thanksgiving dinner with this apple cranberry walnut salad!
Ingredients for Salad
6 cups of baby spinach leaves (or a mixture of arugula and baby spinach)
1 red apple
1 green apple
1 cup of walnuts, roughly chopped
½ cup of crumbled feta cheese
½ cup of dried cranberries
Ingredients for Dressing (Can easily be doubled)
1 cup of apple juice
4 tablespoons of apple cider vinegar
2 tablespoons of honey
½ teaspoon of black pepper
¼ cup of oil
Core and chop apples. You can use thin or 1 inch slices depending on your preference. Toss spinach, apples, walnuts, feta cheese and cranberries in a large bowl. Mix contents of dressing in a small bowl and add to salad right before eating. This recipe serves 4 to 6 people.
This is also a quick and easy dish to make when in a time pinch. No need for the oven or stove!
